Ecuador may be one of the smaller countries in South America, but there is an incredible amount packed inside it. You can find towering volcanoes, Amazon rainforest, Pacific beaches, historic cities and, of course, the extraordinary Galápagos Islands. Ecuador’s tourism ministry actually calls it the “country of four worlds” because of its four distinct regions: the Coast, Andes, Amazon and Galápagos.
When we explored Ecuador from home as a family, we wanted to do more than simply read fun facts about Ecuador. We made an Ecuadorian dessert, learned about the Galápagos Islands, listened to traditional music and even made our own llama stuffies.

Ecuador’s Incredible Geography
1. Ecuador is named after the Equator.
The word Ecuador means “equator” in Spanish. The Equator runs right through the country, just north of Quito.

One of the most popular excursions from Quito takes visitors to the area where the imaginary line dividing the Northern and Southern Hemispheres crosses Ecuador.
3. Ecuador has four very different regions.
The country is divided into the Pacific Coast, Andes, Amazon and Galápagos Islands. That gives this relatively small country an enormous variety of landscapes.

Despite their name, traditional Panama hats are Ecuadorian. Skilled artisans weave them from toquilla straw, a tradition that has been passed down for generations.

Bananas are one of Ecuador’s best-known agricultural products, and the country is a major exporter of bananas around the world.
18. Ecuador grows some highly prized cacao.
Ecuador has a long history of cacao production and is especially well known for fine-aroma cacao used to make high-quality chocolate.
19. Ecuador is famous for its enormous roses.
Roses grown high in the Ecuadorian Andes benefit from intense equatorial sunlight and high-altitude growing conditions. Ecuadorian roses are particularly known for their large blooms and long stems.
20. Ecuador uses the U.S. dollar.
Ecuador adopted the U.S. dollar as its official currency in 2000. American travelers can therefore use the same paper currency they use at home.

21. Spanish isn’t the only language you’ll hear in Ecuador.
Spanish is the country’s official language, but Indigenous languages are also an important part of Ecuador’s culture, including Kichwa and Shuar.
22. Espumilla looks like ice cream, but it isn’t.
This sweet Ecuadorian treat is made from fluffy, fruit-flavored meringue and is often served in a cone. It can look surprisingly like soft-serve ice cream even though it isn’t frozen.
23. Guinea pig is a traditional Andean food.
Known as cuy, guinea pig has been eaten in the Andes for centuries and remains a traditional dish in Ecuador and other parts of the Andean region.
24. Nature has rights under Ecuador’s constitution.
Ecuador’s constitution recognizes rights belonging to nature, or Pachamama, including the right for its existence and natural cycles to be respected.
25. Ecuador packs an enormous amount into one country.
You can find Pacific beaches, snowcapped Andean peaks, volcanoes, Amazon rainforest, historic cities and the wildlife-filled Galápagos Islands without ever leaving Ecuador.
I was able to find a reference to a meringue that is served in a cone like ice cream, and after doing a deep dive on the internet I found this recipe for
Espumilla is an interesting a different dessert, you expect it to be cold like ice cream, but it is room temperature. It is fluffy and melts in your mouth like meringue, but it is flavored with fruit. It is different than we were expecting but so delicious!!!

Esentially, espumilla is Italian meringue with a fruit puree.
If you have never made Italian meringue before this may be a little out of your comfort zone, but rest assured it is easier than it may look at first sight.
The recipe is very straightforward and the only thing I changed is that I made my fruit puree in my vitamix. With the vitamix you can puree everything down to the point that you don’t have to use the strainer at all and you can mix up your sugar in the vitamix as well.
Some tips about Italian meringue:
Once you add the sugar and water together do not stir them (you rise incorporating sugar crystals in your mixture that will keep your meringue from being smooth.)
Use a candy thermometer, there is no good guess work in candy making.
Start your egg whites whipping for a few minutes before you add the fruit puree, it will ensure that your meringue will get to stiff peaks.
Drizzle the cooked syrup in slowly but get it in before the mixture hardens.

Final tip: It takes a long time fore the meringue to reach stiff peaks after the addition of the syrup, basically it has to cool to room temperature. If you want to speed that up, get a dish towel slightly damp, pop it in the freezer for 3-4 minutes. Pull it out and wrap it around the bowl of your mixer, repeat until the meringue is room temp.
We topped our espumilla with these cute sprinkles from sprinkletopia and some mashed up mango. It was delicious.
What to watch for your movie about Ecuador
If you followed along when we traveled to France last week you had tons of movies to choose from. This week the offerings are not as bountiful but the movie we watched was a big hit!
“The Emperor’s New Groove”
Emperor Kuzco is a selfish and arrogant leader who doesn’t have much in common with the people he rules. He is turned into a llama and teams up with a commoner to help him get back to his palace. Along the way he learns about being a better person!
This comedy is truly funny for the adults in the room as well as the kids. Clever, and quick paced you will find yourself laughing out loud. Don’t dismiss this as a kids movie or you will be missing out.
Enjoy a 30 minute field trip where you and your kids can learn all about the amazing diversity of animal life on the Galapagos Islands. This is a must for any animal lovers!
